Three Overnight Mason Jar Recipes For the Busy Student

We’re all running around living busy lives. Most of us just got out of midterms and already finals are looming over the horizon. We all want something easy, healthy, quick, and portable that doesn’t cost a million dollars. I am here to tell you that yes! This is possible! All you need is about an hour or two at the beginning of your week and a bunch of glass mason jars.

There are a bunch of different things you can make by throwing a few ingredients in a jar and leaving it in the fridge overnight. If you don’t have mason jars never fear! With any luck you’re have some pasta jars or jam jars lying around and those will work perfectly fine.

Here are five simple overnight jar recipes that should get you through the week.

Overnight Oats.

    • What you’ll need:
    • About a 1 ½ c of Non-instant oats (like $5 at Publix)
    • About a 1 ½ c of Water or Milk (I prefer milk)
    • 1 Tbsp. Sugar
    • ½ tsp each of whatever flavorings you want.(eg Cinnamon, nutmeg, ginger, cove, cocoa poweder, vanilla extract, almond extract)
    • You could also put in peanut butter/Nutella or fruit if you’d like.

Mix it all together in the jar and stick it in the fridge overnight. Eat it cold in the morning or scoop it out into a bowl and heat it up. Congrats, you now have breakfast for about three days.

Refrigerator Pickles.

  • Cucumbers (Or any veggie you want pickled really)
  • 3Tbsp Vinegar (red wine or apple cider is preferable)
  • 2 tsp salt
  • 2Tbs Sugar
  • Any herbs or spices you want (eg; rosemary, sage, dill, garlic, pepper flakes…)

Cut up your cucumber so that it’ll fit in your jar. You can do slices or spears, whatever floats your boat. Pour in all the ingredients plus enough water to cover the cucumbers then put the lid on and shake until all the sugar and salt have dissolved. Stick it in the fridge and enjoy a nice healthy snack between classes. You could also throw them in salads or put them on sandwiches. 

Your Favorite Yogurt Parfait

  • 1 ½ c of plain or vanilla yogurt (a big tub of yogurt at Publix is $5 or less)
  • Fruit and or jam
  • Whatever else you’d like to add (eg; Granola, honey, Chia Seeds)

Layer it in the mason jar and stick it in the fridge until you need nice snack. This is nice and you can just have a little and put it back without finishing because it’s a reusable container!

 

For about two hours of prep and a lot less money than what you would spend buying a coffee and cake pop from Starbucks you have guaranteed, personalized, healthy snacks for the whole week. Which will come in really handy during finals weeks where you barely have time to study let alone make food.
